GREEN RIVER HEART INSTITUTE, we want your heart-healthy lifestyle to be convenient, fun, and sensible.  An important part of that process is eating healthy, so we've included a number of heart-conscious recipes for your enjoyment.

 

SALMON SPREAD

1 16 oz. can salmon, drained
1 8 oz. pkg. fat free cream cheese, softened
1 Tbsp. lemon juice
1 tsp. onion powder
1 tsp. prepared horseradish
1/4 tsp. liquid smoke
3 Tbsp. parsley flakes

Drain and flake salmon, removing skin and bones. Combine salmon with next 5 ingredients. Mix well. Shape into a ball and chill for 2 to 3 hours. Roll salmon mixture in parsley flakes. Chill and serve with fat free or reduced fat crackers.

Yield: 8 servings

2 grams of carbohydrate, 16 grams of protein, 450
milligrams of sodium, and 25 milligrams of cholesterol
