At the
GREEN RIVER HEART INSTITUTE, we want your heart-healthy lifestyle to be convenient, fun, and sensible.  An important part of that process is eating healthy, so we've included a number of heart-conscious recipes for your enjoyment.

 

CHEESECAKE

Non-stick cooking spray
1/3 cup graham cracker crumbs
1 Tbsp. butter, melted
3 (8 oz.) packages, light cream cheese
1/2 cup sugar
2 eggs
1 1/2 tsp. vanilla extract

Cover outside of 8" x 3" springform pan with foil (to keep mixture from leaking during baking).  Spray pan with non-stick cooking spray.  Mix butter and graham crackers.  Evenly sprinkle graham cracker crumb mixture in bottom and press into place; set aside.

Preheat oven to 325°F.  Mix together cream cheese and next three ingredients until smooth.  Carefully pour cream cheese mixture over crumbs in pan.  Bake for 45 minutes or until center is almost set.  Cool.  Refrigerate 3 hours or overnight.

Yield: 12 servings
