GREEN RIVER HEART INSTITUTE, we want your heart-healthy lifestyle to be convenient, fun, and sensible.  An important part of that process is eating healthy, so we've included a number of heart-conscious recipes for your enjoyment.

 

HOT BROWN

Cheddar Cheese Sauce:
1 tsp. butter or margarine
3 Tbsp. all-purpose flour
1 1/2 cups 1% low-fat milk
1/2 cup shredded reduced-fat sharp cheddar cheese
1/4 tsp. salt
1/4 tsp. ground red pepper

Melt margarine in a small saucepan over medium heat. Stir in flour; gradually add milk, stirring with a whisk until blended. Stirring constantly, cook until thick. Remove from heat; add cheese, stirring until cheese melts. Stir in remaining ingredients.

Yield: 2 cups

6 (2-ounce) slices Texas toast, lightly toasted
6 ounces thinly sliced cooked turkey breast
6 ounces thinly sliced cooked lean ham
12 (1/4 inch thick) tomato slices
1/4 tsp. freshly ground black pepper
Cheddar Cheese Sauce
2 bacon slices, cooked and crumbled
1/4 tsp paprika

Preheat broiler. Arrange toast in a 13” x 9” baking pan. Top each toast slice with 1 ounce turkey, 1 ounce ham, and 2 tomato slices; sprinkle with pepper. Spoon cheese sauce evenly over tomatoes and sprinkle with bacon and paprika. Broil until lightly browned.

Yield: 6 servings
