enjoyment.
EGGPLANT BHURTA
1 large (1 pound) eggplant, sliced 1/4 to 1/2 inch
thick
1 chopped onion
1 teaspoon finely chopped green chili pepper
1 chopped tomato
2 teaspoons vegetable oil
1/4 teaspoon salt
Grill the eggplant slices until they become black in
color. Remove the skin and mash thoroughly. Heat
the oil and fry the onion for 1/2 minute. Add the chili
pepper and fry for a few seconds. Add the tomato and
fry for 2 minutes. Add the mashed eggplant and salt.
Serve hot with bread or pita bread.
Yield: 4 servings
