sensible. An important part of that process is eating healthy,
so we've included a number of heart-conscious recipes for your
enjoyment.
CHICKEN, PASTA, AND VEGETABLE SALAD
1-1/2 cups diced chicken breast (skinned
before cooking and cooked without salt)
1 cup fat free Italian dressing
4 ounces uncooked corkscrew macaroni
1 cup small broccoli flowerets
1 cup coarsely chopped sweet red pepper
1/2 cup cherry tomato halves
1/4 cup chopped green onions
1/4 cup chopped celery
1 Tbsp. chopped, fresh parsley
1 clove garlic, minced
1/4 tsp. dried basil
1/8 tsp. pepper
Combine chicken and dressing in a large bowl and
marinate in refrigerator for 30 minutes. Cook
macaroni according to package directions, omitting
salt and fat. Drain well. Add remaining ingredients to
macaroni. Pour Italian dressing over pasta and
vegetable mixture. Toss gently to coat well. Cover and
refrigerate at least 2 hours before serving.
Yield: 8 servings
