At the
GREEN RIVER HEART INSTITUTE, we want your heart-healthy lifestyle to be convenient, fun, and sensible.  An important part of that process is eating healthy, so we've included a number of heart-conscious recipes for your enjoyment.

 

CHEESY CORN MUFFINS

1 1/2 cups all-purpose flour
1/2 cup cornmeal
1/4 cup sugar
1 Tbsp. baking powder
1 egg, beaten
1 cup skim milk
1/2 cup (2 oz.) shredded low-fat cheddar cheese
1/2 cup low-fat cottage cheese
1/4 cup butter, melted

Combine flour, cornmeal, sugar, and baking powder. In a separate bowl, combine egg, milk, cheddar cheese, cottage cheese, and butter; add to flour mixture. Stir until moistened. Fill muffin cups that have been sprayed with non-stick cooking spray 2/3 full with mixture. Bake at 400° F for 20 minutes.

Yield: 16 muffins
Serving: 1 muffin
