so we've included a number of heart-conscious recipes for your
enjoyment.
BULGUR WHEAT SALAD
1 cup bulgur wheat
1/4 cup olive oil
3 Tbsp. balsamic vinegar
1 Tbsp. finely shredded orange peel
1 large clove garlic, minced
1/4 tsp. salt
1/4 tsp. ground black pepper
1 cup celery, thinly sliced
3/4 cup red sweet pepper, chopped
1/3 cup green onions, thinly sliced
1/4 cup parsley, diced
1 (15 oz.) can garbanzo beans or chick peas
Place 2 cups of water in a medium saucepan; bring to a boil.
Slowly add bulgur and return to boiling. Reduce heat and simmer,
covered, for 12 to 15 minutes until grain is tender and water is
absorbed. Meanwhile, prepare vinaigrette. In a small bowl stir
together oil, vinegar, orange peel, juice, garlic, salt and pepper;
set aside.
In a large bowl combine cooked bulgur, celery, sweet pepper,
onion, parsley and garbanzo beans. Pour vinaigrette over salad;
toss well. Serve immediately or cover and chill for up to 3 days.
Yield: 10 servings
