sensible. An important part of that process is eating healthy,
so we've included a number of heart-conscious recipes for your
enjoyment.
BROCCOLI QUICHE
3 (7 1/2-inch diameter) tortillas
1 1/2 cups chopped broccoli
1/2 cup sliced green onion
4 oz. grated reduced-fat cheddar cheese
2 cups egg substitute
1/4 cup skim milk
1/4 tsp. paprika
1 tomato, cut into 8 wedges
Preheat oven to 350 F. Spray a 9-inch pie pan with
non-stick cooking spray. Cut 2 of the tortillas in half
and place each half in the pan so that the rounded
edge is 1/4 inch above the rim. Place the remaining
tortilla in the center of the pan. Place broccoli, onion,
and cheese over the tortillas. Mix egg and milk together
and pour over the top. Sprinkle with paprika. Bake for
45 minutes or until a knife inserted into the center
comes out clean. Let sit for 8 minutes before cutting
into 8 slices. Garnish each slice with a tomato wedge.
