GREEN RIVER HEART INSTITUTE, we want your heart-healthy lifestyle to be convenient, fun, and sensible.  An important part of that process is eating healthy, so we've included a number of heart-conscious recipes for your enjoyment.

 

BANANA PUDDING

2 1/2 cups skim milk
1/3 cup cornstarch
3/4 cup sugar (or you may use 1/2 cup)
Pinch of salt
4 egg whites
1 tsp. vanilla
Sliced bananas
24 Vanilla wafers

Combine milk, cornstarch, sugar and salt; stirring constantly. Add eggs and cook until thick. Remove from heat and add vanilla. Let cool. Alternate layers of wafers, custard and bananas in baking dish or pan. You may beat egg whites to make a meringue for the top, but you can serve it without the meringue.

You may double the recipe for a 9x13 baking dish.
